Apostate Pasta

So a couple weeks ago a French website posted a recipe for carbonara and all of Italy lost their collective mind.

France, why do you want to piss this guy off?

The procedure called for the whole thing to be boiled altogether in one pot.  And while I’m a fan of the odd one-pot pasta, carbonara should not be trifled with in such a manner.

Boiled pancetta?  Really?

The classic recipe is extremely simple with just four ingredients: spaghetti, pancetta, eggs, and Parmesan cheese.

But simple, especially in the case of carbonara, absolutely does not mean easy.  It’s far easier to botch it and end up with a greasy congealed tangle of noodles that look more like a punishment than dinner.

As appetizing as a letter from the IRS.

What can go wrong: Over, or undercook the spaghetti.  You can burn, or conversely fail to render the pancetta and have limp, fatty pork.  And the most problematic of all are the eggs.  If the heat is too high, or you don’t stir briskly enough, you get scrambled eggs.  And if you do stir with enough vigor it’s possible to not have the now broken pasta hot enough to cook the eggs.

It is a dance that’s potentially dangerous enough to strike fear in the heart of the very finest dancing “celebrity”.

But done right?  Done right it’s a song sung by Freddy Mercury or Billie Holiday.  It’s a landscape by Ansel Adams, a shoe by Louboutin, a dress by Coco Chanel all rolled up into one creamy, unctuous, heart-breakingly delicious bowl of pasta.

See how that sauce clings like a bad boyfriend?  That’s what I’m talking about.

My advice from the trenches is to have every bit of your prep done before you turn on burner one.  If you’re not ready every step of the way, the whole thing will get away from you, and that way lies madness and scrambled disappointment.  Take your time—be the master of your culinary domain, and don’t let the food dictate your actions and state of mind.  You have to commit; you’re cooking something that’s a little advanced; don’t be tentative.

Attitude is half the battle.

My recipe has a healthy serving of attitude.  I had some beautiful fresh angel hair pasta and decided that it really needed to be used for carbonara.  But I had bacon, and not pancetta.  I was also very low on Parmesan, but had a nice big piece of aged Manchego, which is very hard and dry like Parm.

So I made an executive decision.  But purists might take issue with it.

Blasphemous Carbonara

9 ounces long pasta

4 or 5 slices bacon, cut into 1/4-inch strips

3 extra large eggs or 3 large + 1 large yolk

1/4 cup Manchego cheese, grated fine, plus more for garnishing

Salt and pepper to taste

1 cup pasta water, reserved

Place eggs and cheese into bowl, season, and whisk until well-mixed.

In a large pot, cook pasta until al dente in heavily salted water.

In a separate large pan, render bacon.  Remove and set aside.  Pour off bacon fat until 2 tablespoons are left.  Turn pan down to low.

Remove cooked pasta from pot with tongs, reserving water. Place directly into pot with bacon fat.  Toss until well-coated.

Take pot off heat and slowly pour in egg mixture while constantly, vigorously, stirring pasta.  When it’s all added, continue stirring until egg mixture is heated and emulsified.  Briefly place pot back over a low burner if more heat is needed to thicken (sauce should be the consistency of heavy cream).  If it just looks like raw beaten eggs, it needs more gentle heat.  If it seems a little tight, add in abit of pasta water.

Place into two bowls and garnish with the bacon and more cheese.

Serves 2.

If the idea of this pasta dish appeals to you, I really hope you try making it.

And it’s entirely possible that you’ll screw it up the first time.  It’s probably wise to have a dinner backup plan that night, just in case.

But I’m telling you, getting this right has a huge payoff.

Not only do you get to enjoy what is arguably one of Italy’s finest gifts to mankind (even taking into account Ancient Rome and the Renaissance), you’ll have the thrill of being the kitchen swashbuckler who had the chops to put this ambrosia on the table.  You are fierce.

Don’t let the cheese stand alone

Petey likes it simple; very basic, with no fanciness.  He’d be quietly satisfied if it was the same way every single time.

Sometimes simple is ok, but I really like to mix things up; today one way, tomorrow, another.  With me, variety is the spice of life.

I’m just talking grilled cheese here, folks.

An episode of “Chopped” on Food Network got me to thinking about grilled cheese.  A contestant decided to make a chicken pot pie grilled cheese sandwich.

Then she commenced to making a giant, gloppy mess of the whole thing.

She made chicken pot pie filling.  Then she cut some slices of brioche bread.  She filled it with pot pie stuff, slapped on a slice of cheese, and threw it, unbuttered, onto a ridged grill pan.

It didn’t brown, got stuck to the grill, and leaked all over.  She ended up shoveling it into a bowl and serving it to the judges like that,

Shockingly, she was chopped.

If she had really wanted to make a chicken pot pie grilled cheese, there were actually two ways that probably would’ve worked.  She should have made a very thick filling.  Then assembled it by using one slice of cheese on each slice of bread, spreading a layer of filling between them, and browning and crisping it in a non-stick pan.

Or alternatively, made two thin-ish grilled cheese sandwiches, cutting each in the shape of a gratin dish, and using them as the top and bottom crust of a traditional pot pie.

She would not have gotten chopped.

Even though a grilled cheese seems like the epitome of simple, it’s also simple to make a bad one.  You can burn it, over or under melt the cheese, or make it into an oil slick.  But with a few tips, a delicious, well-made sandwich is mere minutes away.

Break out your well-seasoned cast iron frying pan (or a heavy non-stick skillet), and set it on the burner at about medium-low.  Smear a very thin layer of mayo on one slice of bread.  The egg in the mayo will give the bread an almost French toast-like surface.  Place the bread mayo side down onto the heated skillet.  Layer on the cheese and any other fillings, starting and finishing with the cheese so it will act as a glue.

Put another thin layer of mayo on the other slice of bread and place on top, mayo side up.  Put a lid on the pan and cook for about 4-5 minutes.  Uncover pan, check and flip if the bottom slice of bread is browned and the cheese has started to melt.  Flip and cook until the other side is browned and crispy.

Remove and let sit for a couple minutes then slice and serve.

If you’re Petey, you pick Velveeta on Wonder Bread.

But…

Here are a few ideas if you’d like to shake things up:

The Kid likes fried green tomatoes, bacon and pimento cheese on a hearty homemade white made with a touch of cornmeal.  Or crazy sharp cheddar on chewy, mouth-puckering sourdough.

I like caramelized onion and goat cheese on French baguette. And also sautéed mushrooms, short ribs and Laughing Cow on Hawaiian bread.

So here’s my advice: go to the fancy cheese store, and buy some new interesting types.  Then go to a good bakery and get a couple loaves of funky breads.  Visit the produce department, and pick up some guest stars.

Then go into your kitchen and have a grilled cheese party.  No RSVP required.

Let the chocolate chips fall where they may

Each year by this point in January, I’m getting mighty tired of all the commercials for gym memberships and advertisements for nutritional supplements.Instead of working out and eating steamed fish, it all makes me want to lie immobile on the couch and eat milk duds.

I might feel that way, but the truth is I do still try to move around some, and eat reasonably well.  But just because I consume fresh fruit and veg and whole grains doesn’t mean I never eat anything just because it tastes good.

And I really do sleep better when I have a few bites of something sweet before bed.  So last Friday night, when, because of the snow and ice I wasn’t sure if we’d have electricity in the morning, I made a pan of brownies.I started with a mix, which I usually do.  But this batch was the best batch I’ve turned out in years.  The Kid and I loved them, which isn’t very surprising.  But the shocker was that Petey really liked them as well.  Not being a self-indulgent choco-phile, he doesn’t usually eat my brownies anymore.  He says they’re “too much” (but where chocolate is concerned, please explain to me what is too much).

I think these were better received because I didn’t go overboard on any one ingredient.  I added espresso, but just enough to heighten the flavor, not give you a coffee-favored punch in the nose.  There were chocolates, but not a surfeit of any one type.  They were salted, but only enough to give each bite the tiniest little salty crunch.

As a woman I can testify to the fact that some days only a satisfying chocolate treat can keep me from committing mayhem on loved ones and strangers alike.  These mahogany-colored confections, accompanied with copious amounts of red wine, would be a huge hit when shared by a group of women.

Best.Book.Club.Night.Ever.Boxed up and tied with a pretty red silk ribbon, then handed over for Valentine’s Day would ensure extra credit (I actually started to write ‘brownie points’ here) for the next 364 days.

I call these “Golf Brownies” because there are 4 (fore, get it?) kinds of chocolate in them.  Unfortunately, Petey doesn’t appreciate the humor of the moniker.  But bless his heart, he’s got lots of other very good qualities.

*Recipe note-For chocolate extract, I use Nielsen-Massey.  It’s available online and at local fancy cooking stores.  Maldon salt, found at the same kind of places, and lately some mega-marts, is a very large, flaky finishing salt for sprinkling.

Golf brownies

1 13X9 family size package Pillsbury milk chocolate brownie mix

1 teaspoon instant espresso powder dissolved in ¼ cup very hot water

2/3 cup vegetable oil

2 eggs

2 tablespoons Hershey Special Dark cocoa powder

1 teaspoon pure chocolate flavor

½ teaspoon vanilla extract

½ teaspoon kosher salt

1-11.5 ounce bag Ghirardelli milk chocolate chips

1-2 teaspoons Maldon salt

Preheat oven to 350 degrees.  Put all the ingredients except Maldon salt into large bowl.  Mix well.  Pour into 9X13 pan sprayed with cooking spray.  Liberally sprinkle Maldon salt on batter and bake.

Bake 13 minutes, spin pan 180 degrees and bake for 14 more.

Remove to cooling rack and allow to cool completely.  This recipe makes 2 dozen reasonably-sized pieces, or 6 extra-large PMS pieces.

Truly, brownie mix is one of the greatest benefits of living in this great country of ours.

Mmmmm…America…

You can have them ready for the oven in minutes, and they will obediently bend to your will, mood, and pantry.

For texture, try adding broken pretzels, nuts, or Oreo pieces.  Before baking, drop dollops of dulce de leche, peanut butter, or Nutella on  top.  Then using a sharp knife, swirl it enough to produce a marble-like effect.  Go a little sideways, and mix in crispy bacon, cracked pink peppercorns, or diced, candied ginger.

My point is that sometimes, like when it’s day three of being trapped in in the house with your entire family by snowmageddan, there’s nothing in this word that will do but a freshly baked brownie.                                                       Thanks for your time.

The opposite of money

Give a man a ribeye and you can eat in twenty minutes; teach a man to cook a pot roast and dinner will be ready in six to seven hours.Last week I talked about cooking with ingredients that are scarce and expensive.

This week is all about the ingredient that money can’t buy—time.

Salad bars and prepped produce in grocery stores can be a convenient time saver.  But you will absolutely pay for it.  Usually 3-4 times the price of its un-messed-with cousins.“Peasant” food; tough cuts of meat, slow cooking beans, humble, tough grains all take time to prepare.  On the other hand, choice cuts of meat and tender, young vegetables only suffer if they stay on the heat too long.

Frozen dinners and pre-cooked meals from your local store’s hot bars more expensive by a factor or five.  Like my mom says, “Boy, they sure saw you coming”.  It may be nice to quickly grab ready-to-eat dinner, and sometimes necessary, but doing it night after night will triple or even quadruple your monthly food budget.

It’s all about the time.

Like last week, this week’s recipe uses mushrooms; but here the much less costly button-style.  It’s risotto that can be breakfast, lunch or dinner.  It’s not fast, and has to be tended.  All of the components are relatively cheap and just need flavor to be teased from them.

Bacon and egg risotto

3 slices bacon cut into ¾ inch strips

1 pound button mushrooms, cleaned and sliced

1 large shallot, diced

3 garlic cloves, minced

2 cups Arborio rice

½  cup Marsala wine

4 ½ cups chicken stock (approx)

12 ounces frozen peas

¼ cup parmesan cheese

3 tablespoons butter, divided

Salt and pepper to taste

6 eggs

1 tablespoon vinegar

Put stock into saucepan, and set to medium-low.  (You only want stock to simmer; turn down if it starts to boil.)

Put bacon into other saucepan, and render on medium-low until it is brown and crispy.  Remove from pan and set aside.

Pour off the bacon grease until you only have about 1-2 tablespoons in the pot.  Add mushrooms and season.  Sautee until the moisture has released and cooked out.  Add shallot and cook until the veg starts to brown around the edges.

Stir in risotto, garlic and one tablespoon butter.  Cook until the rice starts to brown just a bit.

Pour in Marsala, and cook until it’s completely absorbed.

While the wine is cooking out, put a shallow bottom pan on the stove, fill with water, and add vinegar.  Turn on medium and bring to very gentle simmer.

Constantly stirring, add about 1/2 cup of hot stock to rice pot until the liquid is absorbed, then add more.  After about 3 cups stock, start tasting for doneness and seasoning.

At this point, start poaching eggs, 3 at a time for about 4 minutes.  Remove from water with slotted spoon, and place on a plate covered with a clean kitchen towel to dry.

When the rice is cooked through, add peas, butter and cheese.  Gently stir until butter is melted.

Place about 1 1/2 cups risotto on plate and put 2 poached eggs on top.  Garnish with crispy bacon.  Serves 3.I won’t try to sugar-coat this for you.  It takes a good hour start to finish.

But done correctly you will have a trendy restaurant dish that patrons pay big bucks for.

Notes on a spinach salad

When I was first given the opportunity to write this weekly love letter to food and the Bull City, I was completely at sea.  I had all kinds of questions.

What can I write about?

What can’t I write about?

What if nobody likes my recipes?

What if I stink at this?

To my surprise, I really only had two commandments.  The column should have something to do with food.  And, it should be warts-and-all-honest.  That’s why you have access to multiple humiliating facts about me, and all of the friends and loved ones about whom I write enjoy aliases.

So sit back and relax.  I’m about to share two strange personal mental facts, one mildly embarrassing, and one just plain bizarre.

First, the red-faced factoid: unlike the vast majority of preschool-aged children, I don’t know my right from left.  I’m not completely ignorant, if I really think about it, I can usually get it right two times out of three.  But it’s not instinctual the way it is for everyone else.  For the love of all that’s holy, do not ask me for directions.

The other odd fact is I hear numbers in a rhythm in my brain, and so remember them forever.  I know phone numbers from junior high, zip codes from places I haven’t written to in decades.  Driver’s license number?  Petey’s social?  Expired credit card numbers?  Yep, yep, yep.

And this, unfortunately, is pretty much it for my arithmetical prowess.  I’m straight-up bad at math.

But there’s one algebraic formula that I know inside and out.

Spinach salad computation.

Along with ranch dressing, this is another food I ate for the first time at Mama Cat’s table.

Her components remain the classic elements of anything calling itself a spinach salad.

Spinach: Years ago, when purchasing spinach at the grocery store, it was usually mature, and curly-leafed.  The pre-washed baby variety is currently everywhere.  Curly-leafed is now so rare, it is literally almost extinct.  I like a 5-6 leaf to bite ratio.

Mushroom: About ¾ cup of thickly sliced mushrooms should be in a main-course sized serving.  Use button, cremini, or portobello.  The ‘shrooms are important, but should be of a milder type, so as not to hijack the rest of the elements.

Red onion: Slice them paper-thin into half-moons.  Use about ¼ cup (although true raw onion-haters, like Petey, can be forgiven for omitting).

Bacon:  Was there ever a lovelier word?  The only constraint here is your own concern for cholesterol levels.  I use 3-4 slices, cooked until very crispy, and broken into the bowl at the very last minute, so as to retain that crispiness.

Eggs:  Two per, hard-cooked.  But hard-cooked skillfully.  No green yolks or funky odors.  To achieve this, place eggs in a pot of cold water and add a handful of salt and 2 tablespoons vinegar.  Bring to a boil over medium-high heat.  At that point, remove from heat, cover and let sit for 13 minutes.  Then drain and peel right away under cold water.

Cheese: Not in that first salad, but optional and acceptable.  Diner’s choice as to type.

Dressing:  Ranch, of course.  But the original, made from a packet with mayo, and real buttermilk (use fat-free buttermilk, you’ll never notice the difference).

Just like all of cooking, balance is key.  Balance between flavors and balance of textures.  You need sweet, sour, salty, and bitter.  You need silky, crispy, juicy, and soft.

The one item which would have perfected the balance of that first salad was something sweet and juicy.  Tomatoes or berries are traditionally used for this.  But last week I used fresh clementine segments, and it was really good.

You can also add nuts, or replace your bacon with them (1/4 to 1/3 cup).  It will bring the same crispy, salty crunch.  They’re also much more nutritious.

And because it’s a salad, each forkful will have a varied combination of ingredients and amounts.  So each component should be tasty on its own, and play well with everything else.

With a little practice and experimentation, you can produce your own stellar salad equation.  But if you stumble, just add more bacon or ranch, and it’ll be tasty enough.

Ode To An Onyx Lodge

I just wiped oil off one of my best friends. I toasted coconut, and we got a little sticky.
The name of my anointed friend? It’s characteristically simple and straightforward, just; “Cast Iron”. It’s big, handled, and has the heft to be a lethal weapon. It’s my Lodge skillet.
On the 1999 premiere of “Good Eats”, Alton Brown perfectly cooked steak in his cast iron. He extolled their many virtues. I decided to procure one.
I grew up ignorant of them. I remember, as a child, briefly seeing one at a friend’s house, in a sink full of cold, dirty, water. It haunts me, like someone who years ago witnessed a murder, and only now realizes the true horror of what they saw. Those things are indestructible, but they can be criminally disrespected.
Non-users may feel there’s a lot of work involved in the care and feeding. True, it’s easy to toss a pan in the dishwasher for five or ten years, and then get a new one. But do you know how I usually clean Cast Iron? I wipe it out with a paper towel. That’s the whole deal. And that is but one facet of the beauty that is my forged-by-fire friend.
Curiously, there is only one factory in the whole country that makes cast iron cookware. Lodge Ironworks, in the Appalachian mountains, has been around since 1896. And they still do it the same way.
I once bought a piece that was not Lodge; therfore, not made to US safety standards. When heated, it replaced the house’s oxygen with greasy fumes that smelled of outsourcing and death.
Don’t mess around. For something that can honestly outlast you (and not by murdering you), pay the extra few dollars.
I got mine off the dusty shelf of a sleepy hardware store, unseasoned. Let me repeat that: un…seasoned.
Ask anybody to describe granny’s skillet, and they’ll speak of something the color of the burnished, unfathomable black of (insert name of hated politician or celebrity here)’s heart.
Brand new, and unseasoned, they are closer to the depressing, gunmetal gray of Mitt Romney’s bachelor weekend in Altoona. Also when new, they’re whatever the complete opposite of non-stick is.
To get it as black as a licorice whip and slick as a cruise ship Lothario, the surface must be seasoned. Over time, the heated metal and fat forms a bond, that as it darkens, will become naturally non-stick.
*Microscopic gaps in the smooth, bonded, surface of cookware will shrink when hot (it all has gaps, even well seasoned, long-time possesions). So preheat before using, every time.
If it’s scrubbed after every use, or chunked into the Maytag, that marriage will wash away.
So how to clean?
The key is to, carefully, wipe it when it’s still a little hot. That’s when you deal with any gunk. When the surface is smooth and dry, you’re done. If that doesn’t work, pour some kosher salt in and gently rub. It’s easier with fat, so if needed, splash a little cooking oil into the warm pan. This method can also be used to reclaim neglected pans with an entirely rusted-over surface (like Aunt Eugenia’s set in the attic, maybe?).
What if it’s really messed up, and the salt ain’t gonna cut it?
This next tactic works, but can be dangerous, so at least wear some gloves, and think about maybe renting a haz-mat suit.
Take the pan, as hot as you trust yourself, and pour in some warm water; you’re deglazing the stuck. If the pan is molten, and the water icy, you’ll crack the metal–irreversibly fatal. So, ginger.
Sometimes it’s gloppy and dirty (like for my Skillet Taters). It’s then time for hot, soapy water. It will lubricate and cleanse. If all else fails, use a very soft scrubby sponge (I really dig the hourglass O-Cel-O). Go slowly and lightly, and stop as soon as you feel surface. Give it the same bomb-squad reverence you would a non-stick piece of All-Clad from Williams-Sonoma.

Skillet Taters
If you make these, your skillet will see some warm, soapy water later. Just be gentle.

3 cups unpeeled cubed into 3/4 inch approx. You want them similar size and shape. If you have fingerlings, slice into 1/2 coins. Baby potatoes, quarter or halve, just make sure there is cut are on each potato.
1/2 white onion, chopped
1 tbls each butter and oil (You can substitue bacon drippings, and sprinkle the finished dish with crumbled bacon, but I am not coming with you on your next doctor’s appt)
1 tsp smoked paprika
1/2 tsp dried thyme
pinch sugar
1/2 tsp favorite seasoning blend (I like Goya Adobo with bitter orange)bacon
Salt and pepper
1 1/2 tbls chopped fresh flat leaf parsey
squeeze of citrus, if you’re out, substitute splash of you favorite vinegar
pinch cayenne

In a pot of heavily salted water (it should taste like the ocean any time you boil anything), cook potatoes until just barely tender, a paring knife goes in, but with a little resistance.
Drain, and allow them to dry on the outside. This cuts down on popping and spitting later.
Get your skillet hot. Not quite smoking, because of the fats involved, but really hot.
Tumble in spuds and toss in the pan to coat with fat. Season potatoes with everything, except for onion, parsley, and juice.
When the taters are evenly coated arrange them in one layer. Then take your spatula and give them all little smoosh. Not quite a smash, something gentler. You want be able to recognize a slightly battered cube after smooshing it. Then leave them alone.
Reduce heat to medium, cook until the crustiness that has appeared is browned to your liking. Add chopped onions, toss everything around a bit and then put them in a single layer and smoosh. Don’t get too wrapped up in making sure each potato is perfectly golden, you want some amber colored crust, some blond crispiness, and even some black peeking out here and there. They are home fries, not NASA fries.
Cook until they and nice and crispy, maybe another 6-7 minutes. Stir in parsley.
Just before serving, spritz with citrus, and check for salt.
I like mine topped with a poached egg. Petey likes his with scrambled, and a steak.

If you’re forced to wash it, dry it immediately. Oxidation can happen quickly. Store it like a freshly showered body builder–very lightly oiled. It’s not just sexy, it provides a barrier against moisture.
After especially vigorous cleaning, give your faithful companion a spa treatment. Pour in about a quarter cup of cooking oil, wipe it all around, and let it meditate in a 250-300 degree oven for about an hour. Wipe out the excess while warm, and when it’s cool, put it away, so the saucepans can tell it how rested it looks.
One of the most classic things made in it, and an honest test of your cast iron stewardship, is corn bread.
My favorite is Mildred “Mama Dip” Council’s, “Sunday Cornbread”. It’s moist like it should be, and crispy where it oughta.

My seasoned, loyal comrade now wipes completely clean with one dry Viva. The first time it happened, I almost wept. The memory still touches me deeply.

Do your homework

For you, gentle readers, I do quite a bit of research for these essays. I watch way too much food television. I experiment, culinarily. I also read many articles on the interwebs. (Confidentially, I would probably do it even without the motivation of a weekly column.)
Recently, on Huffpost, there was a piece on the dos and don’ts of shopping warehouse clubs.
It caught my eye, because I love me some sweet, sweet, Costco. It holds a dark fascination for me that really isn’t healthy.
My relationship with Costco isn’t an easy one. Many early trips saw me trying to fit all kinds of random things into my car trunk. If anyone out there has any use for the entire filmography of Dana Andrews on Beta Max, please let me know. And I honestly don’t know why I thought my little family could use up 235 D batteries before the next ice age.
But, after much time, and exercising superhuman self-control, occasionally I can get out of there for less than $100. Not often, but occasionally.
The catalytic article supplied a list of foodstuffs that one must or must not buy at a warehouse club.
A few of the do-bees on the list, meat, cooking oil, and nuts, are good ideas, for me. They butcher their meat on-site, and it is usually beautiful. Unless you feed twenty or more diners each night, you will have to break it up into smaller amounts, and freeze it. My own shopping habits have produced quite a bounty for freezer bag industry. I guess that makes me a job creator.
Costco has a cut of meat that they call tri-tip. It’s not the usual triangular shaped piece of beef you might be familiar with. It’s cut into long strips, five or six inches long, and an inch wide. The great thing about this steak is that you can cook it for a long time, like stew meat (it’s great for beef Stroganoff), or you can cook it quickly for a juicy, flavorful, yet oddly shaped steak. The carnivores at my house enjoy a simple, mock fillet mignon that I came up with.

Tri-Strip Mignon

4 Costco tri-tip strips
8 thin slices of bacon
salt and pepper

Cook bacon on a plate wrapped in paper towels in microwave for about 1 1/2 minutes on high until it’s hot and has lost some grease into the paper towel. This will par-cook it, so it will be much easier to crisp in the pan. Wrap a slice evenly around a piece of seasoned meat, from end to end. Truss it up with butcher twine.

Into a dry heavy skillet (cast iron is perfect) heated to medium, medium-high, place the steaks, and cook them until the bacon is browned and crisp, turning them as they cook. By the time the bacon is done, the meat will be cooked medium rare.
When done, remove from pan, and let rest, lightly covered, for 6-8 minutes. Serve whole, or slice into pretty little rounds.

Those buys make sense for me. Some of the other purchasing suggestions, though, were akin to encouraging a canary to buy dental insurance.
Cereal: Each October The Kid and Petey eagerly urge me to purchase boxes and boxes of the seasonally available Boo Berry and Frankenberry cereal (not big Count Chocula fans). That’s pretty much the only cereal they eat.
I just checked. It is now early June, and I have 3/4 of a box of Boo Berry, and an unopened box of Frankenberry. I should chuck them, but it’s funny to see the monsters grinning down at me from the top of the fridge.
Another list must-buy: coffee. Petey can’t abide the stuff (he’s a Mountain Dew man), and I only like coffe in ice cream and ridiculous lattes prepared by someone other than me. Being a college student though, The Kid loves it. We bought a fancy maker from Starbucks that makes a single, large travel mug’s worth. The problem is, not long after purchasing said maker, the mug was lost. The machine will only work with the special receptacle, so Gramma kindly purchased a second (the entire thing, they don’t sell the cups separately). After that one’s vessel went AWOL, the coffee maker became an expensive, shiny paperweight. Coffee is now purchased by my child, prepared and iced, from Bean Traders, in a massive jug that looks like it should contain white lightening. So, buying seventeen pounds of coffee isn’t a wise choice for us.
Some of the don’t-bees are just as wrong (for me).
Fresh produce. We may not like melons enough to eat eight of them before they go slimy and brown, but my family can put away loads of things like asparagus, mushrooms, and fresh cherries. They carry big bags of sugar snap peas that we love, and there’s enough for few dinners in each sack.
Milk was a recommended commodity. I do buy their heavy cream in quarts. Cream lasts a long time, and we always use it up. But a two gallon jug of milk? I could sail to Singapore on the oceans of expired milk I’ve dumped.
Condiments, such as mayonnaise, were no-nos. But I’m Southern girl. Believe me when I say we can, and do, use up a gallon of that magical white stuff on a regular basis. Mustard and ketchup though, not so much.
Every family is different, and the Huffpost list takes for granted that everyone eats and lives exactly like the writer.
Thus, my point. Before you go all consumer-crazy, and fill your warehouse cart with stuff that will be thrown away, unused, do your homework.
Maybe the thought of six gallons of pickles makes you queasy. Then don’t buy them. But if you can’t start the day without a couple of gerkins dunked in your morning beverage, it’s a very smart buy. Just be realistic, and get only what’s right for you.

Best of both worlds

It’s well known that I’m no fan of the energy draining heat and humidity of our North Carolina summer. I watch for the subtlest of changes to leaf colors the way a middle school boy looks for whiskers on his upper lip.

You’d think with my often whined-about antipathy that I have no love for anything to do with the season.

Au contraire, mon frère.

I enjoy swimming in the ocean (Petey’s always terrified I’m going straight to Europe when I get going — or be eaten by a shark). I like cute sandals. And…

I have to be honest here. I thought and thought, and even asked Petey for help, but I could only come up with one more thing I like about the summer.

I absolutely love summer produce. Tomatoes, berries, summer squash, corn and green veggies; I am there all day.

These days it’s possible to buy fresh summer fruits and veggies out of season, but most of it has traveled from afar, and tastes as much like local in-season bounty as a photographic depiction would.

But if you’re in the mood, and are very particular and discerning, it’s possible to enjoy a summer dish in the fall that has both bright, authentic flavor, and radiant, sunny color.

This can be accomplished by using a combination of fresh and frozen ingredients.

Commercially prepared frozen foods use a method called “IQF”, which means ‘individually quick frozen’. Processing plants are located very near the fields where produce is grown, and right after harvesting it’s prepped and frozen. In many instances it’s done quicker than farmers can get it to the farmer’s market, and you can purchase it and get it home. Corn and berries are good examples.

Some veggies are so easy to grow and ship that they’re always available, at a pretty constant level of quality.

Most grocers usually carry fresh sugar snap peas (usually packaged) and scallions year-round. Supermarket tomatoes are problematic all the time. But grape tomatoes are ubiquitous, sweet and yummy.

So, on a day when it’s nice enough for grilling, I have a side dish and dessert that will create the charade that it’s the middle of the summer — with no swooning involved.

Summer veggie salad

Dressing:

2/3 cup mayonnaise

Juice of 1 lemon

2 tablespoons extra virgin olive oil

½ cup finely grated manchego cheese (may substitute other dry, hard cheese, like Parmesan)

Salt & pepper

Whisk all ingredients together at least one hour before service, and refrigerate.

Salad:

12 ounces fresh snap peas

1 cup grape tomatoes, halved

1 cup frozen shoepeg corn, thawed

2 slices bacon

3 scallions, sliced thinly

½ teaspoon sugar

Salt & pepper

Blanch snap peas: Cook in heavily salted, boiling water for 2-3 minutes. Remove with slotted spoon into ice water. When cool, drain and slice in half at an angle.

Cut bacon into ½ inch strips, and cook until crispy. Remove from pan and drain. Pour out all but 2 teaspoons grease. Into same pan, pour in corn, season, and add sugar. Allow to cook until browned around edges. Remove and let cool.

Put all salad ingredients except bacon into bowl, and mix. Add dressing a bit at a time until coated. Refrigerate until service. Right before serving, stir in bacon. Serves 4-6.

Berry cobbler

1 cup plus 2 tablespoons sugar, divided

2 tablespoons cornstarch

5 cups frozen mixed berries

Juice and zest of 1 lemon

1 cup all-purpose flour

3/4 cup self-rising cornmeal

2 pinches salt

¼ teaspoon fresh nutmeg

1/3 cup butter, melted and cooled

1 cup milk

Combine 1/3 cup sugar, pinch of salt, and cornstarch. Stir this into berries and lemon juice; spoon mixture into lightly greased 2-qt. baking dish.

Combine flour, cornmeal, pinch of salt, nutmeg, lemon zest and 2/3 cup sugar. Whisk in butter and milk. Spread batter evenly over berries.

Sprinkle with 2 tablespoons sugar.

Bake at 350° for 40-45 minutes or until golden. Serves 6-8.

So, to answer that peculiarly 21st century question: Yes, you can have it all.

You can eat like it’s the middle of July, while wearing the cutest pair of suede boots and an adorable little sweater—in October.
