Every good Southern girl knows what this means…

I grew up eating my mom’s version.  She uses canned beans, canned tomato soup, and instant mashed potatoes.  She calls it shepherd’s pie.  But lamb is the base of shepherd’s pie.  And lamb ain’t something that’s ever gonna happen at her house.  She hates it.  The closest thing to lambs at my folks’ place would be a wool sweater.

She makes hers with ground chuck, and when you make it with beef, it’s called cottage pie.

I’ve been in many different kitchens; both professional settings and private homes.

Here’s the kitchen in my mind.

I’ve picked the brains of every cook I could get to stand still long enough to answer any one of a thousand questions.  I now have many of these generous culinary coaches on speed dial and email 911.  Because of their generous, patient, support, I have been able to develop my own personal cooking philosophy.

Here ‘tis:

“Treat every ingredient with respect and elevate it as much as is possible, be it a humble egg, or the most expensive cut of meat.”

So when I decided to make cottage pie, I wanted to use from-scratch ingredients.  I would also work to get the best flavor and most desirable texture to which each ingredient was able to rise.

Honeymoon Cottage Pie

1 lb. 80/20 ground beef

1 large yellow onion, chopped

3 cloves garlic, diced

1 lb. mushrooms, cleaned and sliced

½ cup all-purpose flour

3 tablespoons butter (if needed)

1/3 cup dark beer

2 tablespoons tomato paste

2 cups low-sodium beef stock

1½ teaspoon dried thyme

2 teaspoons fresh rosemary, chopped finely

2 bay leaves

2 cups frozen peas

2 cups carrots, peeled and chopped into ½-inch cubes

Mashed potatoes:

10 medium sized potatoes, peeled and cut into chunks

4 tablespoons butter

1/3-3/4 cup fat-free buttermilk

1 cup shredded cheddar cheese

Salt & pepper

Place potatoes into large pot with plenty of salted water.  Cook over medium heat until spuds are tender.  Drain.  Place back into pot and drop in butter.  Sprinkle with salt and pepper, and using a hand masher, mash until smooth/chunky.  Stir in buttermilk until just a little loose.  Taste for seasoning, cover and set aside.

Preheat oven to 350.

Heat a large heavy skillet to medium-high.  Brown seasoned hamburger.  When cooked, set aside, and leave fat in skillet (add butter if there’s not at least 3 tablespoons).  Put in onions, mushrooms, thyme, rosemary, and bay leaves.  Season veg.  Cook until onion turns golden.  Stir in tomato paste.  When paste darkens and starts to stick to the bottom, deglaze with beer.  When the liquid’s cooked out, mix in flour and cook for 1 minute.  Pour in beef broth and stir until smooth.  Bring to a simmer and take off heat (it should be nice and thick).  Add back meat and peas and carrots.  Check for seasoning.

Pour into a greased casserole dish, or 6 individual ramekins.  If you use individual dishes, you can freeze some for another night. 

Top with mashed potatoes.  Smooth over the top, leaving no gaps.  Cover with foil, and bake for 30 minutes.

After 30 minutes, remove foil and top with cheese.  Return to oven and cook under low broiler until browned and bubbly.  Serves 6.

This is even better with crusty bread and a crisp, green salad.  If you’re a beer drinker, serve it with a glass of the same type you cooked with.  You literally can’t get a better pairing.

Both Petey and I grew up in the 1960’s-70’s.  In this era most of the moms had been raised during the Great Depression and/or World War II.  They were sick of economizing, making do, and Victory gardens

This ennui resulted in a heady enthusiasm for cooking with cans of this, and jars of that.  The only fresh produce many kids from our generation ever saw was potatoes, tomatoes, and iceberg lettuce.

Is it any wonder we have such a messed up relationship with food?  This stuff was considered good eats back in the 70’s.  And what’s up with the knife-wielding woman under the table?

So while many of those dinners we ate hold nostalgic appeal, processed foods do not.  Rehabbing this food using better techniques and fresher ingredients gives us the best of both worlds.

And since we baby boomers are looking at 50 in the rearview mirror, healthier is much smarter.  I don’t know about you, but I’d like to be around to embarrass my great-grandkids.

Embarrassing yes, but even I have my limits.

A spare goose

 

Hey!  I think that kid in the lower left is wearing pajamas.

Go to any schoolyard, and talk to the kids about food likes and dislikes.  You’ll find out that French fries and pizza are big hits.  But my guess is that among the Brussel sprouts, liver and avocado, asparagus will land unequivocally among the top-ten “Ewww, Gross, No way!” list.

I’ve always been a fan.  Even when I was a kid, and asparagus came from a can, I liked those enigmatic green spears.

I don’t think I ever ate or even saw it fresh until I was in my teens.  Then I thought myself quite the gourmand to purchase, prepare, and eat pipe-cleaner sized asparagus.

And I thought that grassy was just the flavor of fresh.

Au contraire, mon frère.

One day, many years ago, I purchased some fresh asparagus.  On the tag was the farm’s phone number for more information about the veg, and recipes.  So, I called it.

The produce gods must have been smiling down on me that day because the phone was answered by the farm’s owner.  And this guy took me to asparagus school

We spoke for at least an hour.  But by the time I hung up, he made sure I had a thorough understanding of his product.

The first thing we talked about is the life cycle of the plant.  It’s a perennial, meaning instead of starting a new plant every year, it grows year after year.  Many people already know this, but it must grow for a few years before the spears can be eaten.  But a healthy plant might last up to thirty years, with many happy springtime harvests.

But those pencil-thin, so-called babies?

That’s what you get with a weak plant, or one that’s lived a full life and now is played out.  It is not, let me repeat this; not desirable.  It will never get the satisfying snap of a correctly cooked spear, and quelle surprise; tastes grassy because there is a surfeit of chlorophyll.

And this, I think, is why kids and many adults dislike this potentially delicious vegetable.  They’ve never eaten a good spear, cooked well.

My farmer friend informed me that the best asparagus is bright, healthy green, as thick as your thumb, with closed, dry tips.  Those restaurants that serve and grocers that sell those infuriating twigs are pulling the compost over your eyes.   They’re not gourmet specimens, they’re lies.

Why don’t we see fatties in stores more often?

Because these are the vegetables that the farmers keep and eat themselves.  And when they feast, sometimes they cook them like this:

Roasted asparagus

2 pounds fat asparagus cleaned, with woody ends broken off

Juice of half lemon with zest set aside

1 tablespoon Dijon mustard

1 teaspoon honey

2 teaspoons mayonnaise

1/4 cup olive oil

2 tablespoons finely grated parmesan + more for sprinkling

Salt & pepper

Whisk together all the ingredients except asparagus and sprinkling cheese.  Pour the marinade over asparagus in shallow baking dish and let sit for one hour.

15 minutes before cooking, place a large baking sheet with cooling rack on it into oven and preheat to 450.  Place veg onto cooling rack in single layer.  Sprinkle with the rest of the Parmesan and bake for 15-20 minutes turning once, until lightly tender, but crisp.

Place cooked asparagus into serving vessel and sprinkle with pinch of large flaky salt and reserved lemon zest.  Serves 4-6.

Nope.

And oh yeah, about that goose in the title?   There’s no lurking fowl.  Here at Chez Matthews, it’s just what we call asparagus.

The runaround

 

So after we voted on Election Day, Petey and I took care of some errands around town.

We headed over to King’s Red and White to order a nice, big, Daisyfield ham for Easter dinner.  This year I’m doing a honey glaze with a chopped peanut coating.

Regina Hicks, an institution at King’s, and I always take a few minutes to catch up.  I discuss my plans for the ham, and she always tells me what she’s really liking in the meat case, and gives me some great ideas.

Regina pointed out a cut I’ve never used before.

But the funny thing is, a week ago I saw it in another supermarket and pondered buying it but didn’t.  It was pork chops, but chops that had been cubed.

Just like beef cubed steak, these had been run through a machine fitted with multiple spikes that pierce the flesh, which tenderizes, and to a certain extent, flattens the meat.  Because of the needling, it cooks fast, which is why another name for it is minute steak.  I use cubed steak for country-fried steak with cream gravy, and country-style steak with brown onion gravy.

Regina said the pork could be used the same way, but suggested another preparation.  She lightly sprinkles a seasoned salt on it, then cooks it briefly in a skillet, melts some cheese on it, and puts it on a bun with sliced tomato.

Even before I cooked it, I knew it would be good, ‘cause in all the years I’ve been shopping at King’s, Regina has never once steered me wrong.

Cubed pork chop sandwiches

2 pork chops, cubed (1/4-1/2 pound each)

1 teaspoon seasoned salt (or just salt and pepper)

1 tablespoon butter

2 very fresh Mexican Telera rolls (or another soft sandwich roll)

Butter lettuce

Shaved red onion

Mayonnaise

Dijon mustard

Preheat a cast iron skillet on medium for 5 minutes.  Pat meat dry with a paper towel and season both sides.  When good and hot put butter in pan and let melt.  Lay in chops and cook on each side for about 90 seconds.  Remove and let sit for 3 minutes.

Split rolls in half and spread Dijon on one side, and mayo on the other.  Cover the bottom slice with lettuce.  Place on pork and cover with shaved onion to taste.

Serve with cole slaw and chips or fruit.

After we left King’s, we went down Roxboro make a stop at the CVS.  But on the way, I saw the TROSA thrift shop at 3500 N Roxboro St, where the Walmart used to be.  I asked Petey to pull in.

Recently I’ve begun visiting the Durham Rescue Mission thrift shop on highway 70.  I’ve been collecting cute little Corning Ware baking dishes, and they usually have them.  And they have a huge selection of books for almost nothing.  Also, I’ve been helping The Kid set up housekeeping and had found a Frugal Gourmet brass pepper mill for less than $10, and my very best find; a like-new bread box that Williams Sonoma sells for $120.  I paid just SEVEN DOLLARS.

That’s right, seven dollars, I swear.

At TROSA I found some more books and a couple of Corning baking dishes.  But both stores are treasure troves of furniture, housewares, appliances, and more.  And by shopping there you’re helping out really worthy organizations.  It’s also fun, like a scavenger hunt.  You never, ever know what you’ll find.

Our next and last stop was the main library at 300 N Roxboro to pick up the new Christopher Buckley that I’d reserved.

Drawers full of good eats.  Can you say that about your own drawers?

Up in the reference department, in an old wooden card catalog cabinet is one of the library’s newest, coolest additions.  They have started a seed collection.  They have close to 100 different plants; veggies, herbs and flowers.  I got enough for a full herb garden: two types of parsley, three kinds of basil, thyme, chives, and dill, plus five different flowers.

These are all free; they just ask that if you are able to harvest seeds, bring them in to share.

I know I’m beginning to sound like a broken record, but I am so grateful for this amazing town of ours.

Fifth annual love letter to Durham

Growing up my dad was in the Coast Guard, and we moved every few years.  Some places I liked, some not so much.

This was just another day at the office for my dad…

But thirty years ago, a young couple moved to the Bull City.  And like kudzu, Durham has crept through me and wound itself about my heart.  This town is funky, fierce, and fabulous.  And I wouldn’t live anywhere else in the world.

Saturday I had lunch with two high school friends, Lucy, and newlywed Maxie.  We try to set everything else in our lives aside once a month, and meet.

This week was Lucy’s pick.  She chose Dame’s Chicken and Waffles (317 W Main St, Durham).  Fun fact: contrary to my assumption, Dame is not a woman,.  It’s actually the nickname of owner, Damion Moore.  Another fact: they are always swamped.  The wait for a table on a Saturday afternoon was an hour and forty-five minutes.   You can make a reservation online.  Do it.

It was the first visit for all of us, so we each ordered something different to get a bigger sample of the menu.

Here is my biggest takeaway.  Somehow, it was as if they had turned the flavor volume up to 11.  The taste of everything was bright and vivid.  I had macaroni and cheese, which was some of the best I’ve ever eaten.  I could actually taste the pasta; it wasn’t just the scaffolding supporting all the yummy cheese.  The chicken (Lucy and I had fried breast cutlets, Maxie had fried legs) was moist, deliciously crunchy, and tasted like chicken—it wasn’t just texture.

The waffles were really good—crispy on the outside, soft and tender inside.  And each plate came with something they call a schmear.

A schmear is Dame’s take on compound butter.  Here again, the flavors somehow seemed cleaner, brighter and stronger without being overwhelming.  I had almond vanilla, Lucy orange honeycomb, and Maxie had maple pecan.  There was no mistaking any of them.  Each was a delicious example of the respective flavors.

I begged Ms. Ella, who runs the kitchen, for recipes.  No dice.  I even got shot down when I asked which herb was used in the chicken and macaroni and cheese.  Still no dice.  But I really like the idea of the schmear, so I came up with my own, Dame-inspired butter.

Pistachio/Honey browned butter spread

2 sticks of butter

4 tablespoons finely chopped pistachios

3 tablespoons strongly flavored honey (like buckwheat)

Pinch salt and pepper

Melt butter in a saucepan, and let cook until it’s foamy and starts to brown.  When the solids are a warm caramel brown, take it off the heat and stir in the honey.  Pour into a bowl and let cool and harden.

When the browned butter has gotten to room temp, place into the bowl of a mixer.  Beat the butter, adding the pistachios.  When the butter is fully incorporated either place in a bowl and refrigerate or place onto parchment paper and roll into a log and chill.

Make about 1 ¼ cups.  Use on breakfast carbs, or melt a tablespoon onto a grilled piece of chicken or a pork chop.

After lunch we hauled our over-stuffed, bloated carcasses down the street.  We stopped at Letters Bookshop (313 W Main St).  We each picked up a couple of books, and wanted more.

We then turned to Dolly’s Vintage (213 W Main St), a fun, colorful, whimsical shop full of adorable, affordable second-hand clothing and quirky new items, including a large selection of Durham merchandise.

We then walked around the corner and ended our day together at The Cupcake Bar (101 E Chapel Hill St).  I love this place.  They have 300 hundred flavors and 75 cent frosting shots, for dog’s sake.  I went home with chocolate stout, Irish coffee, and double vanilla minis.  And of course, as always, they were scrumptious.

Five Points was fun and busy, just what a downtown should be.  It made my heart full to be a part of it.  And girl, those folks were turned out.  I saw more cute sweaters, adorable boots, and fashionable outfits than an issue of Vogue.  They were representing Durham right.

Gosh, I love this town.

Mumbo gumbo

That was Bo; one of my very best and oldest friends.

She called me last night at 11:00.  And if you knew Bo, you’d know how very unusual this is.  Petey and I are unqualified, dyed-in-the-wool night owls, but my friend not only goes to bed with the chickens, she’s the one urging them along.

Bo is my kitchen role model.  She’s been a great cook since we were kids.  Her calm and confidence with all things food inspires me to try new things, even when it scares me.

So, when the phone rang, and it was Bo, but a nervous, worried Bo, I knew something was up.  She told me I was the only person that she could call this late at night (I think she must hang out with farmers and milkmen in Elizabeth City).

Those guys are straight-up party animals.

My culinary rock, the strongest, most authentic person I’ve ever known was in a tizzy because she was making gumbo for her colleagues at her new job, and realized that she had no flour for roux.

Roux is a French word, which in English roughly translates to reddish-brown.  It’s a 50/50 cooked mixture of flour and fat.  Roux can be any shade from very light blond to dark, chocolatey brown.  As roux cooks it darkens and the thickening power decreases, so more must be used. I use it almost exclusively when making gravies and thick, cream soups.  My roux of thumb (Roux of thumb; see what I did there?) is normally peanut butter-colored.  It thickens well, and imparts a buttery, nutty flavor to the food.

In Cajun cooking, the roux is much more rustic and cooked to a dark, brick color, which colors the food, and gives it a rich smoky flavor.

This is cajun roux.  Go any further and it is burned and unusable.

Well Bo was in the middle of a very important pot of gumbo, and out of flour.  Unfortunately, it was 10PM, and in Elizabeth City there are no 24-hour Kroger stores offering shelf after shelf of various flours for sale.

So what’s a desperate culinary rock to do?

My girl made a substitution.  She used a combination of waffle mix and white cornmeal.

And it worked.

Since you don’t normally get anything hot and spicy from me, she graciously offered to share this recipe for her spicy Cajun gumbo.  I love her make-do roux, but if you want traditional, just use one cup each flour and vegetable oil.

Bo’s Gumbo

1 lb. Andouille, sliced

12 boneless, skinless chicken thighs, cut into chunks

2 green peppers, chopped

8 ribs celery, chopped

2 medium onions, chopped

2 tablespoons chopped garlic

1 large can diced tomatoes

1 bag frozen cut okra

2 tsp dried thyme

2 tsp dried red pepper flakes

8 cups (or so) chicken stock

Salt and pepper to taste

After cutting up the chicken I sprinkle it with salt, black pepper, cayenne, granulated garlic, onion powder, oregano, thyme and paprika, mix it to coat well and let it sit for a few minutes.

For the roux I used 1 cup of oil 3/4 cup of Krusteaz waffle mix and 1/4 cup white cornmeal.

Get it nice and dark.

Brown the vegetables, add Andouille and chicken, cook for about 10 minutes, stirring occasionally.

Add can of tomatoes. Start adding roux a spoonful at a time, stirring as you go. Stir in most of the chicken stock.  Add the frozen okra and let it come to a low boil, turn down heat to low and cook for 1.5 hours, stirring every five minutes or so to keep it from sticking. Add more chicken stock as needed. 

Some Andouille is hotter than others so if it isn’t spicy enough you can add hot sauce at the end to your taste.

It is better when served the next day. Most people serve it over white rice but I just eat it like it is.

You cam omit the chicken and add shrimp but only add them after it’s done or they will be little rubber bits.

Hey jalousie

Jalousie is a French word, meaning louvers.  It’s also the technical name of this week’s dish.

But I have given it an American twist, used my writer’s prerogative, and renamed it.

This new recipe is now called “Saloon Doors”.

I learn the oddest and most arcane things writing these essays each week.  I should rent myself out for trivia games.  For today’s topic I did a little research on those swinging louvered doors festooning saloon entrances in Western movies.

And discovered they’re pretty much a Hollywood invention.

Think about it, having half doors swinging in the wind would have been a horrible idea for someplace like Montana in January.  And using those doors would have left no manner of securing the saloon when closed—which it did for at least a few hours every day (Miss Kitty needs her sleep, y’all).

But they make for very dramatic entrances of black-hatted villains and white-hatted heroes into the saloon and thus Tinsel Town has implanted them irrevocably into our collective psyche.

Anyway, back to my own, edible, clichéd, saloon doors.  The recipe calls for puff pastry, manipulated, stuffed and baked.  So once you know the procedure, you can fill it to your taste and occasion.  As a jumping-off place I’ll give you four ideas for filling; breakfast, lunch, dinner, and dessert.  Where you go from there is up to you.

This recipe is made with frozen puff pastry, found in most supermarkets, and made by layering dough with butter, rolling, and refolding, countless times.  This gives it up to a thousand layers.  The water in the butter evaporates while baking.  This produces steam which gives the puff.

I offer a few pieces of advice.  Try to purchase all-butter pastry; it tastes and cooks better.  Let it thaw overnight in the fridge, or if not possible, on the counter until it can be unfolded and worked.  If you seal the edges, you will not get left.  So don’t get egg wash on them; it’ll glue them shut.  When cutting; cut, don’t press.  When sealing the two pieces, be gentle.  Egg wash, then cut the slats, so the steam can escape.

Saloon doors

(Makes 2 complete pastries)

2 sheets puff pastry, thawed

1 egg, lightly beaten

Preheat oven to 425.

Cut each sheet in half.  Lay out two pieces on parchment-lined cookie sheet.  Spread filling on each, leaving a ¾ inch border.  Brush beaten egg on naked border.  Fill. Top each piece with the other sheet.  Lightly press border to seal.  Brush egg on top layer.  Leaving ¾ inch border, cut 1-inch horizontal slats down the length of each piece.

Bake at 425 until the pastry begins to brown and puff.  Lower oven to 375 and bake until dough is dry, crisp and deep golden-brown.

Slice and serve.  Makes 4-6 servings.

Breakfast Filling:

Scramble 10 eggs.  Season.  Cook 6 slices bacon until crisp. Spread eggs onto bottom sheets of pastry, leaving ¾ inch border.  Sprinkle on crumbled bacon and chopped fresh parsley.  Top with pinched off pieces of goat or Boursin cheese.  Cover with second piece, brush with egg wash, and cut slats, leaving border.

Bake according to directions above.

Lunch:

Sauté leeks and mushrooms until browned and dry.  Spread on pastry.  Sprinkle on julienned prosciutto.  Using a potato peeler, scrape ribbons of Parmesan cheese over top.  Lay on top pastry, prepare, and bake.

Dinner:

Spread thin layer of pesto on bottom of sheets.  Cover with shredded rotisserie chicken.  Dot with sun-dried tomatoes and mozzarella cheese bits.  Finish and bake.

Dessert:

Spread half of a jar of black cherry preserves on each sheet.  Cut one 8-ounce block of cream cheese into small squares.  Top preserves with cream cheese, and dot with toasted, chopped pecans.   Cover, finish, and bake.  Sprinkle cooled tart with powdered sugar, and serve with whipped cream, or ice cream.

These are easy, but look impressive.  If you often have unexpected guests, it’s not a bad idea to keep a box of puff pastry in your freezer.  You could fill them with anything that you have on hand.  And when you carry out one of these puppies they’ll be so fancy looking, you’ll make Martha Stewart look like a slacker.

My, how fun

I was born with what I believe is a legitimate congenital defect.

The technical, Latin nomenclature for this is (or should be), Lingua Infans, or “Baby Tongue”.

Regardless of appetites or desires, the ingestion of fiery, spicy foods results in pain and distress.  As a result, I can eat almost no Indian food, and Jamaican food scares the pants off me.  Even a heavy-handed use of black pepper can overwhelm.

Many people make fun of this flaw, and inform me that it’s a matter of will; that if I want to be a grown-up and eat spicy foods, I should just put on my big girl panties, and do it.  Not true.  I’d love to be able to tuck into a plate of tikka masala, or some spicy nachos, but I am physically unable to do it.

But what I also don’t do is make a big deal out of it.  It’s my habañero-covered cross to bear, no one else’s.  So when eating out I’ve become very good at avoiding suspect menu items.

I think that’s one reason why I love Chinese food so much.  While there are dishes with enough heat to really hurt me, they don’t comprise the bulk of the menu.  Other Asian cuisine; most notably Thai, are not so safe.

This week’s recipe is my home version of Chicken Mei Fun (pronounced, “my fun”).  It’s very similar to fried rice, but instead of rice grains, angel hair pasta made from rice is used (Find it in Asian markets and some grocery stores).

Chicken Mei Fun

8 ounces rice vermicelli

Lay into a pot of very hot water, and soak for 20 minutes.  After soaking, pour into a colander in which you’ve placed the spinach.  This will wilt the spinach and get it ready to toss into the stir fry.

Protein:

3 cups shredded rotisserie chicken

3 eggs, well beaten

2 tablespoons chives, chopped

2 teaspoons vegetable oil

Make an omelet with the eggs and chives.  Cut into 1/2-inch strips and set aside for assembly.

Vegetables:

2 carrots, julienned

1/2 yellow onion, sliced thinly

8 ounces mushrooms

1 tablespoon vegetable oil

 Aromatics:

3 cloves garlic, minced

2 tablespoons grated ginger

1 large shallot, diced

 Sauce:

Whisk together

3/4 cup soy sauce

2 tablespoons toasted sesame oil

1 tablespoon brown sugar

1 tablespoon cider vinegar

1 tablespoon Sherry

 Finishing:

2 cups raw spinach

1 cup frozen peas, thawed

 *Stir frying goes crazy fast once it gets started, so get all of your prep done before turning on the burner.

To cook:

If you don’t have a wok, get a very large, very heavy pot almost smoking hot.  Add 1 tablespoon oil to the pan.  Put in the carrots and mushrooms.  Cook for a couple of minutes, and when all the liquid has released and cooked out, add onions.  Cook for 30 seconds.

Stir in aromatics then immediately add the proteins.  Pour in sauce and toss.

When coated, pour in noodles, spinach, and thawed peas.  Gently mix to coat.

Serves 6-8.

I’ve eaten this from a few Chinese restaurants.  But the more popular recipe is called Singapore Mei Fun.  It’s a reflection of the Indian population living in Singapore, and this version has curry.  As you can guess, because of my affliction, I do not have a good relationship with curry.

But if you would like, you are welcome to Singapore up this recipe with the addition of 1 ½ tablespoons curry powder and 3 dried bird’s eye chilis.

Don’t hide your ‘shrooms under a bushel

I have no idea how I lucked out, but I did.

Normally chanterelle mushrooms sell for about thirty dollars a pound.  Consequently, I’ve never had the pleasure of their company in my kitchen.

But a while back I was in Whole Foods.  I don’t whether it was a mistake, there was a glut on the market, or it was a straight-up holiday miracle, but those puppies were selling for $4.99 a pound.  I filled a bag, and skipped all the way home.  The whole time I expected someone to grab me because there’d been some type of grievous mushroom error.

Nope, I made it back to Chez Matthews, chanterelles in hand.

I then pondered preparation.

Spinach salad: one of my favorite recipes with mushrooms.

We eat mushrooms a few times a week, in all kind of dishes.  But I didn’t want to dim their star power one bit.  It would be like having Aretha Franklin over only to ask her to sing “Happy Birthday”.

So they would not languish in gravy, or meatloaf, or soup.  I wanted my windfall to b.e the star.

About the same time I was in Lowes Foods and bought a bag of completely adorable cherubic red skinned potatoes.  They were literally the size of a shooter used in a game of marbles.  Actually they’re known as marble potatoes.

To celebrate these two delightful, earthy treasures, I decided to do a simple roasting.  This would keep them close to their natural state.  I wouldn’t try to manipulate the flavors either, but just bring out the very best of them that I could.

If you don’t happen to luck out and find some fresh chanterelles that you can afford without a second mortgage, any type of mushroom can be used.

Oven-roasted chanterelles and potatoes

1 ½ pounds (approx) marble or grape-sized potatoes, washed, but left unpeeled

1 ¼ pounds (approx) chanterelles or other wild mushrooms, washed and cut into bite-sized pieces.

¼ cup vegetable oil

1 ½ teaspoons salt

1 teaspoon pepper

Place a large pan into oven and preheat to 450 degrees.

Place potatoes and mushrooms into a large bowl, and drizzle with oil.  Season with salt and pepper and toss to coat.

When the pan and oven are up to temp, pour vegetables onto pan into one even layer.  Bake for about 30 minutes, or until potatoes are tender, and mushrooms are brown and crispy around the edges, stirring every 10 minutes.

Serves 4-6.

Although The Kid might strenuously disagree with this statement, I usually don’t like to lecture.  But in this case, I feel that I must make a point.

I’m not sure that we always remember how fortunate we are as Americans.  The quantity and quality of our choices with which to stock our pantries is almost obscene.  Within thirty minutes of my house there are probably fifty different places to shop for our dinner.  The only limits are money and imagination.

Even if I am cooking something as common and prosaic as hamburger, tomatoes or egg noodles, I feel the need to honor the food.  To treat each ingredient as lovingly and skillfully as I am able.  Not only am I paying basic respect to the cow, farmer, or noodle maker, the flavors that result will reflect the care I have taken.

Heavy sauces and complicated cooking procedures originally became popular to hide wonky, and even rancid food.

But because of the plethora of choices, and superlative quality the best thing we can do is to get out of our food’s way and let it shine.

A spicy tale

Boy, I raised one thoughtful spawn.

Very close, very old friends of The Kid just had a baby (not quite one of those new year babies—they missed it by about 36 hours).

But since it’s not possible to wrap up sleep and deliver it all tied up with a pretty bow, my child did the next best thing; the gift of time was chosen.

Homemade wild rice chicken chowder and a lentil stew were made, along with something sweet with which to nibble.  The chowder and stew were prepared and are in the chill chest in freezer bags.  But because of The Kid’s work commitments, I volunteered to bake and pack up the cookies.

When the couple was asked for their confectionary preference, a ginger molasses cookie was requested.  Since this particular type is not in our family’s repertoire, an internet search was made.

I found a recipe that I felt hit most of the notes, and started with that.  Then I fleshed it out by altering flavor and techniques.

I used a vanilla bean and vanilla extract.  The caviar I added to the butter.  I tossed the empty pod into my sugar canister.  The original recipe, for some reason, never called for nutmeg.  I added it.  I also added nutmeg to the rolling sugar.I used a cookie scoop to portion the dough, instead of just a spoon.  Using one is quicker, easier, and makes all the cookies the same size, which means they all cook at the same time.

I leave you with one crucially important piece of advice.

Do not crowd the cookies in the pan while baking.  And for the love of all that is holy, do not rush them into the oven by cutting short the dough refrigeration time.  They will spread out all over the sheet, and not set up correctly.  I did this, and had to throw away the first batch of nine (See, I crowded the sheet pan).  They tasted really good, but were too thin and gooey to live.

Chewy ginger molasses cookies

1 vanilla bean

1½ cups butter, softened

2 cups granulated sugar + more for rolling

½ cup molasses

1 ½ teaspoons vanilla extract

2 eggs

4 ½ cups all-purpose flour

4 teaspoons baking soda

2 teaspoons ground cinnamon

1 teaspoon ground cloves

1 teaspoon ground ginger

¼ teaspoon freshly ground nutmeg

1 ½ teaspoons salt

 DIRECTIONS:

Preheat oven to 375°F.

Split the vanilla bean, scrape caviar onto butter.  Set aside at room temp to soften.

Whisk together flour, soda, cinnamon, cloves, ginger and salt. Set aside.

With electric mixer, beat together softened butter and 2 cups sugar on medium for 1 minute until light and fluffy.  Add in eggs, molasses, vanilla extract, and beat on medium-low until combined.

Gradually add in dry ingredient mixture and beat until fully incorporated.

Using a medium (about 2 tablespoon capacity) cookie scoop, portion out all the dough.

Refrigerate scoops for 1 hour then remove and them roll into balls.  Return to fridge and let chill another 30-45 minutes.

Fill a small bowl with about 1/2 cup sugar and a pinch of nutmeg, and roll four balls in one at a time until they’re completely coated. Place on parchment-covered cookie sheet and bake for 5 minutes, spin the pan 180 degrees then bake for 5 more until they begin to slightly crack on top (They’ll crack more while cooling.).  Remove from the oven and transfer cookies, still on parchment to wire racks to cool. Bake off the next four.  Store in a sealed container for up to 1 week.

Makes about 2 ½ dozen.

I’ve never been a ginger snap, molasses cookie kind of girl.  But I have to admit, when I tasted one of the rejects, I was really surprised.  Yes, they are very spicy.  But extremely tasty, too.  These are more of a grown-up cookie for somebody who wants less sweet and more sassy to their desserts.  They would also be really, really good cookies with which to make ice cream sandwiches, say with some butter pecan, or peach ice cream.

And again, do not rush these into the oven.  They must be very cold and hard before hitting the heat or you will have delicious manhole covers.

This is bad.  You do not want this.

Saving Grace

Last year, when Petey was in the hospital more than he was home, it was a pretty awful time with very few bright points.

One thing that saved us and kept us from giving up was the people we met.  There was Rocky, an adorable respiratory therapist who always made us smile.  Alex and Jason, two of Petey’s surgical intensive care nurses, felt almost like members of the family.  Chris took it upon herself to make sure The Kid and I was ok and had everything we needed.

To talk about every person that touched us in some way would take way more room than I have here.  But Maggie, a health unit coordinator in the SICU, gave us a gift that we continue to enjoy to this day.

One day when I was completely exhausted with my meal choices, and dying for a new option, Mags told me about Grace’s Café in Trent Hall (331 Trent Dr, Durham). They serve breakfast, lunch, and dinner, with both classic American, and Asian fare.  The food is really good; they make their own noodles from scratch and have duck on the menu, for goodness’ sake.

Grace’s is kind of hard to find, but oh my Gawd, so worth looking for. This is the facade of Trent Hall, Grace’s is downstairs.

But for The Kid and me, the very best item on the menu is eggplant in garlic sauce.  It is the best tasting Chinese eggplant I’ve ever eaten.  The sauce is as silky as a French nightgown.  Normally a pretty spicy dish, they prepare it for me with no chilies.  They also have brown rice, which makes me feel slightly virtuous while I’m pigging out on their amazing food.  I love it, and could conceivably eat enough to put me into a coma.

You have not lived…

Once Petey was released for the final time, we continued to go by Grace’s for take-out occasionally.  But because we don’t live terribly close, and it’s not always on the budget, we don’t eat their food as often as we’d like.  So when we’re lucky enough to eat Grace’s, I like to get two meals out of each visit.

I could order a bunch of other stuff, but I like to economize by preparing my own sides for each night.  One night I fix inexpensive steamed dumplings from Fresh Market or Kroger.  And for the other dinner, I cook a batch of snow peas.

When I prepare the dumplings at home, I make them into pot stickers.  And even though it’s a super simple procedure, they’re nicely crispy and taste like they just came from a restaurant.

Store-bought pot Stickers

1 container prepared steamed chicken or pork dumplings

2 tablespoons water

2 teaspoons vegetable oil

Put water and oil in a non-stick skillet and turn heat to medium-low.  Place dumplings into skillet.  Cover.  When hot (about 5-10 minutes), uncover and turn heat to medium.  Allow dumplings to brown and crisp up on one side (another 5-10 minutes).  Remove and serve.

Dipping Sauce:

1/3 cup soy sauce

1 tablespoon cider or rice wine vinegar

8-10 drops toasted sesame oil

Pinch of chili flakes or dollop of chili paste (optional)

Whisk ingredients together.

For the second meal, I prepare yummy quick-cooked snow peas.

Sizzling snow peas

1 pound snow peas, washed, cleaned and kept whole

1 tablespoon vegetable oil

Salt and pepper to taste

2 teaspoons sesame seeds

Slurry:

1/3 cup chicken or veggie stock

3/4 teaspoon cornstarch

1 tablespoon soy sauce

1/8 teaspoon toasted sesame oil

Pinch of Chinese five-spice powder

Pinch of sugar

2 cloves garlic, minced

Add oil to heavy skillet and heat on medium-high. While it’s heating, whisk together slurry ingredients and have ready. When the oil is almost smoking hot, add snow peas and sesame seeds, toss until coated with oil, then lightly season with salt and pepper.  Cook until all the peas pods have turned bright green and are hot.

Quickly pour in slurry.  It should immediately boil.  Stir to coat veg.  Let cook until the sauce has thickened up.  Remove from heat and serve.

Serves 4.

Just like the band Foreigner sings, with fresh sides each night, “It feels like the first time”.  And I’m sure they were talking about Chinese food.
