Hail to the chef

In 1939, when King George VI and Queen Mary visited the US, President and Mrs. Roosevelt had a picnic for them at Hyde Park and served hot dogs.

People were shocked, but the king and queen loved it.

In 2016 when the pampered and privileged visit Chapel Hill’s Crossroads restaurant in the Carolina Inn, they can roll up their sleeves, get their hands dirty and eat roasted peel & eat shrimp; covered with spice and served with green tomato cocktail and comeback sauces.

People are charmed, and everybody loves it.

The surroundings are beautiful and historic, the service is warm but faultless, and the ingredients are top quality and thoughtfully sourced.  But James Clark, executive chef of the Crossroads has no patience for fussy fine dining and the atmosphere it creates.

I’ve known Chef James since he was hired, about 3 ½ years ago.  When I heard about him, I was very interested in meeting him.  He’s from Elizabeth City, as am I.  And, he attended culinary school at the New England Culinary Institute, in Vermont, which is The Kid’s alma mater.

We ultimately met at a reception introducing him as executive chef.  True to Chef, he catered his own wing-ding.  Luckily for every guest in attendance, he catered his own wing-ding.  The first thing he ever fed me was a fluffy, buttery biscuit, and nestled within was a piece of perfectly slow-cooked and rendered pork belly (I stuck one in my pocket, and took it to Petey—who loved it).

Last week he invited Petey and me to the Carolina to celebrate my birthday and sample his new spring menu.  Instead of ordering, I asked the chef if he would choose for us.  Our palates and bellies would be in his talented, capable hands.

Chef divides his menu into “Sharing Plates”, “Small Plates”, and “Large Plates”.  Dishes were set in front of either Petey or me, but we shared everything.

Clam frites.

The first course was clam frites and his peel & eat shrimp.   The clams were cooked in their own shell and flavored with bacon and fennel.  Also included was a big vessel of fresh-cut fries spiked with tangy yet mellow Carolina Bleu cheese. The shrimp were perfectly cooked, delicious, and messy fun.  They were served with a green tomato cocktail sauce which was developed by his Chef de Cuisine, Jonathan James.

It’s great for all sorts of things.

Green Tomato Cocktail Sauce

Green Tomato Ketchup Base:

4 Cups Green Tomatoes                                                                              

3 Tablespoon Worcestershire Sauce                                                                     

1 Cup Apple Cider Vinegar                                                                          

3 Tablespoons Texas Pete                                                                                          

½ medium sized onion (julienned)                                                                                 

2 Tablespoons garlic (minced)                                                                                  

¼ cup brown Sugar                                                                                       

¼ cup granulated Sugar                                                                                        

2 tablespoons salt                                                                                                       

1 tablespoon pepper                                                                                                                            

½ cup water

Combine all ingredients in medium heavy bottomed pot, bring to a boil reduce to a simmer. Reduce in volume by half. Cool and blend on high until smooth. If the base is not bright you can add a drop or so of green food coloring to bring back the color.

Cocktail Sauce:

3 ½ cups Green Tomato Ketchup Base                                                            

¼-½ cup Horseradish, depending on taste

Juice from 1 lemon

5-8 dashes Texas Pete                                                                                            

Salt & Pepper to taste

Stir ingredients together.  Makes approximately 4 cups.  Store leftovers in the fridge, or place in zip-top bags and freeze flat.

Space prohibits me from divulging more about our meal in this column.  But next week is the sequel with another delicious, do-able recipe from the kitchens of the Carolina Crossroads, and the minds of Chef James and his uber-talented staff.

Melissa’s Pie

My paternal grandmother, Geraldine, made awesome pie crust.  The grandchildren would dance around for the little cookies she made with dough scraps, jockeying for position to score the first one out of the oven, gladly accepting the trade-off of burned little hands and tongues.

My mom makes great pies.  Lemon meringue, apple, and her world-famous pecan are only a few.  But her crusts come from the supermarket’s refrigerated section.

I always assumed that I didn’t have the patience to make crust from scratch, so on the infrequent occasions that I needed pastry, I used pre-made.

Evidently, they’ve been doing this for a long time…

But as I learned to cook, pie became my secret shame.  There’s nothing wrong with using pre-made, but not knowing how to make pastry was a hit to my ego, and a milestone I should have already passed.

Then I saw Melissa D’Arabian, a TV chef I admire greatly, make pastry dough on Food Network.  It looked do-able.  A French master baker/chef said that her crust was just as good as he could do.  So I tried and it worked like a charm.

I’ve made it probably 100 times since then and never had any problems.  It works great for single and double crust pies, and the hand pies that come from her dough are so pretty and tasty, I feel like I should pay someone for such glorious eats.

Melissa-inspired pie crust

1 cup butter (2 sticks), cubed and chilled

2 ½ cups + ½ tablespoon cake flour

1 teaspoon salt

3 tablespoons very cold vodka (Vodka is tasteless in the cooked crust.  But feel free to add another kind to lend flavor to the finished product; bourbon for pecan or apple for example, or amaretto for peach pie.)

5-8 tablespoons ice water

Put the butter, flour, and salt in the food processor, and pulse lightly just until the mixture resembles wet sand. Add vodka then water, 1 tablespoon at a time, pulsing briefly after each spoonful. Keep adding liquid until the dough just begins to gather into larger clumps.  Pour dough onto flat surface and lightly knead just until it comes together.

Divide dough in half and transfer into re-sealable plastic bags and pat into disks. Let rest in refrigerator for 30 minutes. Or freeze for later. 

Before baking, chill formed dough for 30-60 minutes.  Bake at 425 degrees until golden, timing depends on size and shape of product.

Chicken pies that I made with homemade magic crust.

I add vodka to lower the chances gluten developing.  Gluten is the protein that makes bread dough stretchy.  It also makes for a disappointingly chewy pie crust.  The secret of a light flaky crust is to stop kneading the second you can press a portion of dough in your fist and it keeps its shape.

And you want the crust to be cold when it hits the hot oven.  This accomplishes two things.  The butter will melt all at once, and the steam that is produced will create little air pockets, which contributes to a flaky mouth-feel.  And there will be very little shrinkage, so the pie crust won’t retreat down the sides of the pie pan.

I have, in the distant past, produced pastry dough that was so overworked and tough the only thing it was good for was the sole of a tennis shoe or a pencil eraser.  So I can’t emphasize strongly enough how shocked and delighted I was the first time I made tender, flaky pie dough.

And I owe it all to my cooking crush Melissa.  I figured if it was her procedure, there’s no way I could fail.

Curds and why didn’t I know about this?

I didn’t even know this was a thing.

I was shopping online for The Kid’s birthday present, and I got distracted looking for this awesome pear/vanilla jam I bought from Whole Foods.  It was an intensely flavored spread that made me feel like my morning toast was actually a piece of birthday cake in disguise.

Unfortunately, they no longer carry it, and I never took note of the brand, which means I can’t look for it by name.  So, every once in a while I’ll fall down the Google rabbit hole for a few hours searching for something which may not even exist anymore.

During the hunt, I discovered that Dickinson’s, a Smucker’s-owned company that makes lemon and lime curds, also makes vanilla curd.

Vanilla Curd?!?  Stop and let that sink in a moment.  Vanilla.Curd.

And thus I discovered vanilla curd was a thing.  I decided to purchase some.

But here there be roadblocks.  #1-It’s not sold in any stores within a 50-mile radius.  #2-I can order it, but only by the case.  #3-The cases start at $30.00.  #4-Shipping for something I don’t even know if I’ll enjoy is an average of $12.87.

Look, I just bought a pair of sandals that I had to return because they gave me blisters, I can’t have two massive shopping fails in one week, my pride just won’t stand for it.  I took the shoes back to Marshalls, but I can’t return internet curd just because I don’t like it.

This thing might just work…

But then my search-engine-softened brain had a thought: Gee whiz, I can cook.  Maybe there’s some type of home machine that fits onto my lap and can connect to the whole wide world to find a recipe?

By gum, there is, and I found one (and then tweaked it some).

Debbie’s vanilla curd

curd ingredients

1 cup sugar

3 tablespoons cornstarch

2 vanilla beans, halved, split and scraped

1 cup water

Large pinch of salt

2 egg yolks, beaten

4 tablespoons cold butter, cut into pieces

2 teaspoons vanilla extract

In a medium pan, combine sugar, cornstarch, salt, and vanilla beans and caviar. Add water and cook over medium heat for 5 to 7 minutes, or until thickened.

In a small bowl, lightly beat egg yolks. Whisking constantly, very slowly pour about a cup of the hot sugar mixture into egg yolks; add egg yolk mixture back to hot sugar mixture, whisking to combine. Cook over medium heat for 4 minutes, or until thickened.

Remove from heat.  Discard vanilla beans; whisk butter into hot curd. Stir in vanilla extract. Let cool; spoon curd into airtight container and store in refrigerator for up to 2 weeks.

This stuff tastes like vanilla did when you were a kid, and your taste buds were new.  Think drinking milkshakes in the back seat or Hunt’s Snack Pack with the metal pull-off lid that all the grown-ups said would cut your tongue when you licked it (but it never did).  It tastes like what vanilla smells like.  It tastes like warm happiness.

The texture is like lemon curd or creamed honey.  It’s slow moving and very spreadable.

What to put it on?

Well, my spoon worked awesomely.  But seriously, I’d put in on cakes, or cookies.  You could drizzle it on ice cream or fruit, or stir it into some hot milk, with a dusting of nutmeg.

As for me, I had a schmear on my English muffin.

And totally felt like I was back in the lunchroom at Central Elementary.

The late-ish Debbie Matthews

I always used to be on time.  Always.

Then I met Petey.  That boy will be late to his own funeral.

So the fact that I’m talking about corned beef and cabbage, 3 ½ weeks after Saint Patrick’s Day is apt.

But you know what?

Any time is the right time for corned beef, because it is heavenly, meaty ambrosia.  Whether eaten hot, with a plate full of butter-drenched veg, or heaped between some rye, corned beef is mouthwateringly delicious.

Recently I made it for the first time.

This wasn’t by choice.  If I’d had my way, I’d make it all the time.  But Petey absolutely loathes it.  And, until recently, so did The Kid.

My child and I share a love of Reubens.  But traditional corned beef and cabbage was only enjoyed by me, and I couldn’t justify cooking an entire brisket for one.  Joyously, The Kid has lately had a change of heart.

But Buddy-Roe, we can put away Reubens like Reuben-eating rock stars..

Profoundly non-kosher Reubens

4 slices seeded rye

½ pound thinly sliced corned beef

½ cup sauerkraut

4 slices Swiss cheese

Mayonnaise

Thousand Island dressing

Lay out bread.  Spread mayo to taste on 2 slices, and Thousand Island on the other two.  Lay one piece of cheese on each slice of bread.  Top half the rye with corned beef and sauerkraut.

Spread very thin layer of mayo on the outside of sandwiches.  Cook in skillet on medium-low until hot and melty.

But to make this delicious dish, you need some corned beef.  Most of the time I pick it up from a deli.  But now I can make corned beef with veggies, and put together a Reuben with homemade leftovers.

Corned beef and cabbage

2 pound corned beef brisket with spice packet (or 2 tablespoons pickling spice)

1 large yellow onion

2 tablespoons butter

4 bay leaves

3 cups dark beer, divided

2 heaping tablespoons Dijon mustard

2 tablespoons maple syrup

Salt and pepper

Water

8-10 medium red skinned potatoes, washed and cut into 4 pieces

1 head of cabbage, cored and cut into 8 pieces

1 pound carrots, peeled and cut into large pieces, or left whole if they’re small

6 tablespoons butter melted mixed with 2 tablespoons each chopped fresh parsley and chives

Preheat oven to 250.  Place Dutch oven on stove-top and set to medium.  Melt butter in pot.  Slice onions into half-moons.  Add to pot with bay leaves, spice, salt and pepper.  Cook on medium-low until onions are golden.  Turn heat up to medium-high and stir in mustard.

Pour in ½ cup beer.  Scrape up any bits clinging to pot bottom.  Add maple syrup and cook until almost dry.  Add rest of the beer.  Place in brisket, fat side up.  Add enough water to barely cover meat.  Insert probe thermometer set to 210.  Cover and place in oven.

When brisket gets to 195 degrees, put potatoes into separate pot with salted water to cover.  Add enough corned beef cooking liquid to cover by 1-2 inches.  Cook on medium.  After 10 minutes add carrots and cabbage.  Cook until all veggies are tender.  Drain and pour parsley-chive butter over.

When corned beef hits 210, remove from oven and let rest for 5-10 minutes.  Carve thinly against the grain.

Serves 6.

Normally I’d recommend serving this with salad.  But when it comes to this meal, I have no shame.  I can eat my weight in corned beef.  When this is on the menu, I don’t want to clutter up my belly with anything else.

The fray in the Bay (7)

Three years ago Southern Living magazine named Durham “The South’s tastiest Town”.  With food trucks, restaurants that run the culinary gamut from Elmo’s (776 9th St) to Revolution (107 W Main St), and hotels both new and acclaimed, like the Washington Duke (3001 Cameron Blvd) and 21c Museum (111 Corcoran St), the Bull City has the food thing locked up.

But in April we get a new food-based feather in our cap.

For the first time, from April 18-21, the Got to Be NC Competition Dining Series will be holding battles here; at Bay 7 in the American Tobacco Campus (318 Blackwell St).

In a bracket challenge similar to the NCAA basketball championship, area chefs will compete in multiple cities, culminating in the Battle of the Champions in October, at a location which will be announced later.

The rules are exciting, as well as delicious.  Each round will be two chefs and their team competing head to head.  The teams will face off and prepare three course meals centered on a theme ingredient that remains under wraps until the morning of the bout.  Each ingredient comes from a North Carolina farmer or artisan producer.

Normally each team consists of a local chef and their team.  In the past the teams all came from the same kitchen.  But this year there’s a twist; the teams may consist of chefs from three different establishments.  What this means for the diner is that a team could turn out three courses each of which has been spearheaded by an award-winning executive chef.

I think that just upped the game a tad.

But it won’t only be a panel of judges that benefit from this game.  Ticketed guests dine on the six-course meal that is produced.  Then without knowing who produced which plate, and using an interactive app, diners and judges vote, deciding who moves on, and who goes home.

The competition starts in Durham, then moves on to Winston-Salem, Greensboro, Raleigh, Charlotte and Wilmington before the Final battle of the champs.

Competitors must be currently employed food professionals.  The participants were chosen on March 10th, and will be announced soon.  If you’re interested in attending, get more information and purchase your tickets at competitiondining.com.

Last week I visited a foodery owned by one of our illustrious Bull City chefs.  I dropped into Nana Taco (2512 University Dr), for a trunk-full of takeout grub.  It’s the brainchild of Scott Howell, also owner of Nana’s (2514 University Dr) and the newly opened Nanasteak (345 Blackwell St).

Petey got one of their ginormous quesadillas with pork butt.  The Kid and I each availed ourselves to the three taco deal.  For around $7.25 (depending on which meats you choose), we got three tacos, rice, beans, and chips.  I always get at least one made with the tender and unctuous garlic beef.  Then I chose from the “dirty meat” category; exotic cuts and critters like duck and lamb.  My child and I dined on pork belly and hog jowl.  The cheek was the best of the three, but they were all heart-breakingly scrumptious.

As always we ordered extra rice and what I believe are the best pinto beans in town.  And although they always have an imaginative selection of beers, I sipped on a pink lemonade while Petey and I watched the end of the first round of the ACC tourney before heading home.

I picked up dessert across the street at Miele Bon Bons.  It’s a bakery/candy shop with everything from wedding cakes to French macarons and out-of-the box chocolates.  I left with eight pieces. Out of many varieties of macarons, I picked crème brule, salted caramel, and pistachio macarons (my favorite).  The candies I purchased were dark chocolate salted caramel, blood orange-balsamic-pink peppercorn, and an Earl Grey confection.  It all came to around twenty dollars, which is a terrific deal for fancy hand-made chocolates.  For the price, it’s a delightful, affordable, every-day luxury.

Durham is a real happening place.  With culinary special events and our local independent food businesses, we are all pretty darn lucky.

Here’s an idea: on your next day off, plan a day trip—in your own hometown.

Jam session

Although some people who know me (Hello Petey and The Kid) may call it an affliction, I just happen to appreciate jam and jelly.

Right now in my fridge there are 13 jars of various fruit preserves, including the Stonewall Kitchen caramel apple butter I picked up yesterday.

That’s not counting Goober Grape and the many, many bottles in the honey/syrup subsection.  Give me some toast, a biscuit, or waffle, tell me your mood, and I’ve got a topping for ya.

My true life-long love affair. Petey Who?

Even though I pick up new sugary, jewel-colored jars wherever I go, there are a couple of types that I would never consider buying because I always make them from scratch: onion marmalade and garlic jam.

The onion marmalade derived from a newspaper article I read many years ago.  And the garlic goop is the byproduct of making garlic oil, which I always try to have on hand.

Either can be used by themselves, like a schmear under some melted cheese on a sandwich or a burger or to dress up some crostini.  You can also use it as an ingredient; I stir a heaping tablespoon of onions into the sauce for my smothered pork chops, and the best red salsa I’ve ever had includes garlic jam.

Neither is hard or expensive to create.  They only cost time and the willingness for you and your home to be heavily allium-scented for a day or so.

Onion Marmalade

5 pound yellow onions

2-3 tablespoons vegetable oil

1 1/2 teaspoons kosher salt

3/4 teaspoon freshly cracked pepper

1 teaspoon dried thyme

Peel onions and cut in half.  Slice into ¼ inch thick half-moons.

Place largest, heaviest pot you own on a burner and turn to medium-low.  Put in all ingredients, and toss to coat.  Cover and cook for about 15-20 minutes or until most of the liquid has been released from onions.

Uncover and cook on low, stirring frequently until the onions have cooked down and are deeply amber, about 3-4 hours.  Don’t rush or they will burn and stick.  Taste for seasoning. Makes 2-3 cups.

This’ll last about 2 weeks in the refrigerator.  I usually keep about a third in the fridge to use right away and label and freeze the rest.  It will give anything you use it in a serious depth of flavor—but be careful, the taste is intense; it’s easy to overdo.

The garlic is even easier.

Garlic Oil and Jam

4 heads garlic, separated and peeled, with tough, dry ends cut off

2 cups olive oil

3 cups vegetable oil—I use grapeseed

Salt & pepper to taste

½ teaspoon dried thyme

Juice of 1 lemon

Place garlic in heavy saucepan and pour in oils.  Turn to medium-low and cook slowly until garlic is light golden-brown, about 45-60 minutes.  Turn off burner and let oil and garlic cool.

Remove cloves to bowl of food processor and pour oil into clean receptacle and refrigerate for up to 3 months.

Process cloves with salt, pepper, and thyme until mostly smooth.  Pour in lemon juice and process until it is very smooth and looks like humus.  Taste for seasoning and refrigerate for 2-3 weeks in airtight container.  Makes about 1 cup.

With these in your fridge, you can spike a quick weeknight meal, and that dinner will take on a slow-cooked, fussed-over taste.

Or, like The Kid, you can eat the garlic jam from a spoon when you think nobody’s looking.

Nuts to you

First, let me start by saying that I am cognizant of the fact that neither peanuts nor chick peas are nuts.

Both are legumes, but they possess a certain nutty quality.  And not just because they think Jaws 2 was the better than the original and sandals with socks are a good look.

Yeah…not so much.

The chickpeas were the toughest, taking the most tinkering.  I’d made them (badly) in the past and was not impressed.  I thought they were just another healthy food that folks had convinced themselves were tasty, so they would munch on them, and not the potato chips.

But when I finally got a batch in which most were correctly roasted, I understood.  They are uber-crunchy (Petey has never actually tried them, because to him, they sound “too” crunchy—not even sure what that is), and flavored with lots of lemon, garlic, and Puerto Rican spices.

The goal when cooking is to roast them until all the moisture is gone, but they aren’t burned.  Which isn’t as easy as you’d think.  I tried lots of different combinations of heat and time, re-baked ones that weren’t done, and tossed many that were blackened nuggets of despair.

Last week, I finally cracked the code.  They take two hours in the oven, but when they’re finished the entire batch is cooked to uniform doneness.

My recipe produces a citrusy, garlic-y result.  But please, flavor them any way you like.  Go Chinese with toasted sesame oil and five spice powder.  Do a spicy Southwest version with cayenne, paprika, and chili powder.  Or make them Jamaican with some jerk spice.  That’s why making your own is so darn satisfying; you’re the boss of your own chick peas.

Trial and error roasted garbanzos

1 15 ½ ounce can chick peas

1 tablespoon garlic oil

Juice of ½ lemon

2 teaspoons Goya bitter orange adobo

Preheat oven to 325.  Drain and rinse beans.  Put into sturdy, dark, 9 inch round, or square metal pan.  Drizzle on oil and juice, sprinkle on spice.  Roll around to evenly coat and put in single layer.  Bake 30 minutes, then remove from oven and roll around and toss.  Do this every 30 minutes for a total of 1 ½ hours.  Then give them one last jiggle, turn off oven and let sit inside, undisturbed, for 30 more minutes.  Makes 1 ½-2 cups.

When I worked for Bosco, we had a customer who was a caterer and each year at Christmas would bring us homemade Buckeyes.  For the uninitiated, they are delicious little peanut butter balls coated with chocolate.  They are to Reese’s cups what steak is to a Mickey D’s quarter pounder–they both come from a cow, but that’s where the similarity ends.

I often give these as gifts.  I make up the balls, and then freeze.  When I need some, I just coat them with the chocolate, without even thawing them.  Use a toothpick to dunk them, then smooth out the little hole you’ve made.  The wax keeps the chocolate glossy, but you won’t taste it.

Buckeyes

5 ½ cups confectioner’s sugar, sifted

1 c. peanut butter

1/2 lb. (2 sticks) butter, softened

1 teaspoon salt

Caviar from 1 vanilla bean

½ bag semi-sweet chocolate chips

½ bag milk chocolate chips

About 1/3 cup canning paraffin wax, finely chopped

Blend butter, peanut butter and vanilla. Add sugar and beat to dough-like consistency. Form into balls with small scoop and chill or freeze. Melt chocolates and wax in microwave on 20 second intervals, stirring after each, until almost fully melted.  Then stir until completely smooth. Double-dip balls in chocolate, leaving circle of peanut butter showing.  Makes about 6 dozen.

My last recipe is crazy-simple.  But you won’t be able to keep your hands out of these pecans.

Obsessive-compulsive Pecans

Melt 2 tablespoons of butter in skillet on medium.  Add 2 cups whole, shelled pecans.  Salt and pepper to taste.  Stir constantly until they’re lightly browned and smell nutty.  Drain on paper towels.

So here you have it.  Three recipes that are perfect to put out for visitors, or give as gifts.

And, if somebody tells you to go nuts, you can say, “Don’t mind if I do.”
